line is an example of the industry making this possible.
" We're trying to perfect the technology to achieve the
artisan result but on an industrial level with super-high automation, "
he said. " We try to develop a machine for the
product that makes it the best and not lose its spirit. "
Mr. Besems added that bakers going from a handcrafted
to automated process must work closely with suppliers to
ensure their product maintains quality.
" They have become successful with their product, they
have grown with that product so that they could start investing
in more automation, so we need to help guide them
in the right direction so they don't need to change anything, "
he said.
Perfecting the process
Manufacturers may be eager to produce the latest and greatest
in pizza, but they must first define their product goals.
" A lot of the time, people will just say 'Here's my capacity;
here's what I got; I want to make a pizza crust,' " Mr.
Hagedorn said. " But they forget to really get to the point of
the crust they want to make. "
There are many ways to make a quality pizza, but each
method will result in a distinctly differently product.
" That's why it's so important that you test, " Mr.
Hagedorn said. " It's up to the pizzamakers to be as specific
as possible about what they want their end product
to be. The more specific you are, the more familiar you
are with the process of the crust you want to produce,
the better off you're going to be. "
Johnny Hecht, managing director of Rondo, added that
equipment today can produce practically any type of pizza.
The only thing limiting pizzamakers is their own process.
" We sell equipment to produce the product, but without
the process we produce nothing, " he said. " Most people
have no idea about the process, so they buy equipment,
start to produce and then say, 'That's not the pizza I want.'
But it's too late. "
To ensure bakers get their desired pizza, it's critical they
perfect details like mixing times and temperatures at the
beginning of the line, Mr. Hagedorn said.
" If you screw that up, there's nothing you're going to do
afterwards that's going to be able to improve it, " he emphasized.
" More attention needs to be paid to the front of the
line, then it should be easier down the line. "
The world of pizza is expanding with BFY crusts, unique
toppings, artisan inspiration and more, and with the latest
advancements in technology, bakers can grow along with it.
