across the country we send our products to, " Mr.
Lensing said.
Four sizes of muffins are produced on the White Line,
including 0.9-oz mini muffins as well as 2-, 4- and 6-oz
muffins. The bakery can produce nearly 1 million, 2-oz
muffins in a day, Mr. Lensing said.
" Once it starts in the morning, we don't shut it down
until 22 hours later, " he added.

place the cups in the pans. They're filled with batter
by Hinds-Bock depositors and topped with
Colborne Foodbotics topping depositors.
Muffins are baked and cooled in an
Auto-Bake Serpentine system, and
a Yaskawa Motoman robot depans
the muffins that travel through a
cooling spiral that feeds five individual
Ilapak wrappers. All muffins
go through a metal detector
before they are manually packaged
either in cardboard trays or
a case, depending on the product.
The laminated dough with 108 layers makes
up the coffee cakes. The dough goes into pans
before heading into the proofer.

The fourth line in a nearby building is a sponge dough
process that makes the family-pack cinnamon rolls,
strawberry rolls and other topped rolls. The dough is
sheeted on an AMF Tromp line before being cut and
placed into pans. A variety of fillings are then added to
the topped rolls.
After 60 minutes in the Stewart Systems proofer, the
pans go into a Baker Perkins 960 oven then into an overhead
Baker Perkins cooler.
The rolls then go into an automated Stone depanner
and through an icing waterfall and are then run through
an I.J. White ambient cooler. The rolls are packaged in
clamshells, which is handled manually.
The Level 2 SQF-certified facility that is also koshercertified
shuts down each night for a full equipment
teardown and cleanup.
As the bakery continues to expand, Mr. Keaton and
his team intend on remaining true to their values of not
compromising the product, customers or employees.
But they will continue to find new efficiencies and keep
their products affordable.
" We're not going to play the ounce game and take our
coffee cakes from 14 oz to 10 oz or 14 oz to 12 oz, " Mr.
Keaton said. " We're not doing that. We're going to figure
out how do we drive down costs, how are we going to
keep this a value-added proposition. Those three core
values we don't compromise. But everything else is on
the table. "
