Not all of the magic happens
during the actual application stage
of the process, though. For a filling
to be successful,
the product
it's
intended for needs to have an integrity
that will hold up to the filling's
requirements.
" When you're talking about fillings,
it is extremely important to
talk about the upstream process, "
Mr. Moline said. " When you have
an inline filler, you need to ensure
that your products are within a
very tight size and weight range,
so that your product-to-filling ratio
is always consistent. That's an
extremely critical thing when considering
filled donuts and especially
inline filling. "
The benefit of redundancy
In a donut line, quite often the
manufacturer will be creating donuts
of more than one kind, with
different types of icings and fillings.
To avoid the need for a separate
line for each donut type, bakers
need to consider options that
allow for faster changeovers. There
are several ways this can be done.
" In high-changeover plants, a
second set of depositors will enable
quick-change, " Mr. Hatch
said. " Essentially, as a product line
is completing, a second set of depositors
are filled and ready to exchange
on to each line. This minimizes
the operational downtime
of cleaning equipment, changing
tooling and mixing new product.
In the correct environment,
this can become a massive return
on investment. "
