" Spelt is gaining in popularity with consumers and

said. " Buckwheat, too, has a nutty flavor. It has also been
described as having a slightly bitter yet pleasant taste.
Buckwheat can contribute an appealing delicate texture
in baked products, and it also acts as a good source of
