Scott Baker said. " But as soon as I walked in, I could see
the whole bakery, and it was exactly what I needed. "
The deal was made, and Scott Baker worked with The
Austin Co. to plan the layout and renovation of the old
supermarket into a wholesale bakery plant. Once it was
complete, he invested in new equipment to fill the space,
and production was up and running in 2016.
The bakery has one loading dock where raw materials
come in and frozen finished products leave. The original
facility had two small freezers, which were replaced with
one large freezer that stores 100 pallets of products. A
refrigerated cooler next to it stores ingredients.
Production runs along the perimeter of the
21,000-square-foot building with dry goods and packaging
supplies stored on racks in the center. Each turn in the
production line represents a natural break in the process.
Scott Baker has plans to eventually build an additional
7,500 square feet that will serve as a warehouse for the center
racks and open up the space for more production lines.
Dough is sheeted on the makeup line to the appropriate thickness.
