Baking companies secure
ethical recognition
Grupo Bimbo SAB de CV, Kellogg Company and PepsiCo Inc.
were among the 136 organizations recognized by the Scottsdale,
Ariz.-based Ethisphere Institute in 2022 for their commitment to
business integrity.
For 16 years, Ethisphere has released an annual list of organizaEPA
awards baking plants
with Energy Star
Bakeries owned by Bimbo Bakeries USA, Horsham, Pa.; Flowers
Foods Inc., Thomasville, Ga.; and other companies were among
the 93 manufacturing plants awarded Energy Star certification in
2021 by the US Environmental Protection Agency (EPA). Energy
Star certification designates manufacturing facilities as the most
energy efficient in their industries.
" As these companies demonstrate, improving energy efficiency
serves to confront climate change while strengthening
our economy, " said Michael S. Regan, administrator at the EPA.
" Manufacturing plants that reduce energy consumption as part
of the transition to a zero-emissions future save money and create
the resiliency needed for the long-term health of their operations,
our economy and our planet. "
Overall, these Energy Star plants avoided the consumption of
90 trillion Btu of energy compared to average plants and prevented
more than 7 million tonnes of greenhouse gas (GHG) emissions,
which is equal to the energy use of nearly 650,000 homes,
according to the EPA.
Bimbo Bakeries USA had 17 plants awarded, Flowers Foods
Inc. had 14, TreeHouse Foods Inc. had four, Klosterman Baking
Co. had three, Crown Bakeries had two and Mile Hi Cos. had one.
" Energy awareness and efficiency are hallmarks of Flowers'
GHG reduction efforts, " said Margaret Ann Marsh, vice president
of sustainability and environmental at Flowers Foods. " Our goal
to reduce GHG emissions 20% by 2025 in our manufacturing operations
is central to our sustainability strategy, and we are pleased
that nearly one-third of our bakeries have qualified for Energy
Star certification as a result of their efforts. "
Since 2006, the Energy Star Industrial Program has annually
certified manufacturing plants for performing within the top 25%
of energy performance in their industries nationwide. More than
230 plants have achieved this distinction since 2006.
Plants with a verified energy performance score of 75 or higher
out of 100 are eligible for the Energy Star certification. This
means their facility performs better than 75% of plants within
their industry.

integrity. Ethisphere uses a 200-point assessment as well as documentation
review and individual research on organizations to determine
inclusion on the list. Categories that are evaluated include
governance, leadership and reputation, culture of ethics, ethics and
compliance programs, and environmental and societal impact.

Mexico City-based Grupo Bimbo earned a place on the list for
the sixth consecutive year; PepsiCo Inc., Purchase, NY, was recognized
for the 16th consecutive year; and Kellogg, Battle Creek,
Mich., was an honoree for the 14th time. The C.P. Group, Thailand;
illy, Italy; ADM, Chicago; and Brown-Forman, Louisville, Ky., also
made the list in the food and beverage category.

Enzyme pioneer
Jan van Eijk retires
After 27 years as research director for Montreal-based Lallemand
Baking, Jan van Eijk, PhD, retired earlier this year. Dr. van Eijk
is best known for several enzyme and yeast patents that changed
the way the baking industry approached dough conditioning and
shelf life. These patents were among those that enabled the baking
industry to embrace the clean label movement.
Dr. van Eijk started his career in the baking industry in 1984 at
Gist-Brocades, which was based in The Netherlands. Dr. van Eijk
joined Lallemand when the company acquired Gist-Brocades.
Europe had already eliminated bromate from use in bakery formulations,
and when Dr. van Eijk moved to the United States and
saw the movement picking up steam in California, he adapted the
enzyme ingredients used in Europe for use in North America.
One of Dr. van Eijk's most significant patents was for maltogenic
amylase, which allows bakers to preserve the softness of
their bread for longer in a label-friendly way. He leaves the baking
industry with one patent still pending, an engineered enzyme
that is better at anti-staling than his ground-breaking maltogenic
amylase.
