SUCCESS IS IN THE BAG
These key steps can keep bakeries' bagging and closing equipment running optimally.

Baggers have been tried-and-true workhorses in bakeries for decades. Keeping them humming along on
high-speed production lines requires precision not only
in maintaining the equipment but also in the rest of
the operation.
When problems arise with the machinery, it pays to
look up the line to see if anything needs to change.
" If it's sloppy upstream, then it's much harder to run, "
said Dennis Gunnell, president, Formost Fuji. " You have
to look at it from a holistic approach. Not just, 'Hey, our
packaging equipment runs like crap.' Let's really dive
into it. Is it the machine? Is it what we're putting into it?
Is it the people who are running it? Or is it a little of all
of those? A little here and there really adds up. "
Taking the right steps to keep the equipment in top
condition and following best practices can help bakeries
avoid headaches.

inefficiencies, " said Bill Kehrli, vice president of sales and
marketing, Cavanna Packaging USA.

" Anything that moves in a bagger has to be maintained, " said Justin Atkins, director of sales, Bettendorf

they have more complex equipment and fewer people
than they used to have. A lot of times it's hard for the
maintenance staff to get in to do all the PMs that are
necessary in the down windows that are given to them.

Preventative maintenance is critical
The first consideration for bakeries striving to run at optimal capacity is to follow the preventative maintenance
schedule (PM) for bagging and closing equipment.
" Faithfully implementing and completing the preventative maintenance schedule for your closure equipment is
one of the most reliable ways to keep the equipment running optimally, " said Josh Hughes, sales account manager,
Burford Corp., a Middleby Bakery company. " The manufacturer's recommendations are a good starting point. But
