Energy Management
As COVID-19 begins to recede, it's
a good time for bakeries to refocus
efforts on energy efficiency.

Walt Tunnessen estimates that on the shelves of US
plants and factories, hundreds of " uncashed checks "
are sitting on dusty shelves, long forgotten. They can
be found in the form of bulky reports written by outside
energy pros who came in and pointed out the ways
the plant could save energy and money, handed over the
findings and left.
" These reports identified lots of energy-saving opportunities,
but what happened was nobody ever cashed
the check because the plant did not own the findings, "
said Mr. Tunnessen, Energy Star industrial sector manager
at the US Environmental Protection Agency (EPA).
" Sometimes the site was handed this 100-page threering
binder. Who's got time to read that? You hand it to
a plant manager who's busy, and he hands it to the maintenance
people, and they are like, 'It's not my job.' The
binder wound up on the shelf. "
The problem was not lost on the energy managers at
Toyota, who decided to try a new approach by engaging
a variety of workers inside its plants when the company
was trying to save money. By including plant insiders,
getting buy-in from top managers and other key employees,
and calling the assessments treasure hunts rather
than audits, the program worked much better.
" If you ask people to be part of something like this,
it gives people more of a sense of responsibility, " Mr.
Tunnessen said. " And that makes people feel good. It
makes them feel
like you respect
their opinion, and
you might learn new things because everybody's got a
good idea. You might not have thought about a thing
that they see daily. You might unearth some new ideas
and solutions. "
Moreover, getting the buy-in creates an interest in the
project throughout a plant, which leads to an expectation
that findings will be implemented.
" Some of our most innovative solutions have come
from our own team members, " said Margaret Ann Marsh,
vice president of sustainability and environmental,
Flowers Foods Inc., Thomasville, Ga. " We foster a team
culture of empowered energy savings and best-practice
sharing across our 46 bakeries and networks. Other valuable
resources are our partnerships with the EPA Energy
Star and the Department of Energy Better Plants program.
They provide great support to advance our national
program via technical assistance, tools, best-practice sharing
across industry and recognition for our teams. "
Many large-scale bakeries like Flowers Foods have been
doing this for years, hunting around for compressor leaks,
idle machinery left running and other simple ways to conserve
electricity, saving thousands of dollars in the process.
