" You have to incorporate multiple front-end units
to create that marble or swirl effect with two different
doughs, " Mr. Magistrelli explained. " One of the biggest
challenges to make this bread is fundamentally having
the floorspace in your plant to have those multiple frontend
setups for two doughs and then the sheeting to sheet
out two doughs and then the makeup table itself with
the tooling required. A baker making conventional pan
bread with a divider, moulder system may be surprised
at how much floorspace is needed. "
And incorporating a swirled bread on an existing
sheeting line will require extra length to accommodate
the added tooling.
" For a midsized or industrial producer who wants to
use existing equipment or incorporate a new solution
into a Glimek line, you could develop a sheeting section
that would be slightly longer to accommodate the filling,
curling and automatic panning of the filled or marbled
dough pieces, " Mr. Fernandez said.

with the right production line design.
