Specialty food sales top
$170 billion
The specialty food market reached $170.4 billion in sales last year,
up 13% from 2018, according to new research from the Specialty
Food Association. Specialty food sales at retail surged more than
19% in 2020 alone, while specialty sales to foodservice plunged
by 30%.

" We meaningfully are a more valuable company today. " With that
statement, Andrew P. Callahan, president and chief executive officer,
Hostess Brands, kicked off his presentation as part of the
virtual Evercore ISI Consumer and Retail Summit held June 15,
a presentation that explored the different ways the Kansas Citybased
baking company has found ways to grow during a challenging
past 18 months.
Mr. Callahan said a key advantage for Hostess is also a pretty
basic one: availability. Mr. Callahan said Hostess had a 15% share
of the sweet goods breakfast category back in 2018 and now is
at about 21%. He pointed to strong innovation such as Donettes
snack packs, Cream Cheese Coffee Cakes and, more recently,
Baby Bundts.

Bakers Manufacturing
Academy adds new courses
The American Bakers Association (ABA), Washington, D.C., unveiled
two new specialized courses that will be offered as part of
its Bakers Manufacturing Academy: Tortillas and Variety Hearth
Bread Lessons.
The Tortillas course features one module covering flour tortillas
and one explaining corn tortillas. Participants will be trained
on the unique product characteristics, ingredients and processing
variations used in the production of flour and corn tortillas.
Instructors will discuss production settings as well as characteristics
of a " good " finished product, the ABA said.
The Variety Hearth Bread Lessons course features one module
covering hearth bread and one explaining sourdough bread.
Participants will be trained on the unique product characteristics,
ingredients and processing variations used in the production of
wheat, whole wheat, multigrain, rye and raisin bread.

PepsiCo expands Frito-Lay
plant in Texas
PepsiCo Inc., Plano, Texas, announced plans to invest $200 million
in its Frito-Lay plant located in Rosenberg, Texas. As part of
the expansion, PepsiCo said it will add two manufacturing lines
for Funyuns and tortilla chips, as well as increase capacity in its
warehouse to enhance capabilities and enable future growth.
This is the second investment Frito-Lay has made to the
Rosenberg site since 2019, when the company announced a $138
million investment that added a new Cheetos line, new seasoning
and packaging equipment, and a warehouse expansion, set to be
complete later this year.
" The Rosenberg site has the largest footprint of any Frito-Lay facility
in Texas, producing snacks for Texas, Louisiana, Oklahoma,
Kansas and Georgia, and several other parts of the country when
we hit times of peak demand, " said Laura Maxwell, senior vice
president of supply chain, PepsiCo Foods North America. " We
thank Fort Bend County for bringing investments like this to life. "

online and in drug and dollar stores. The report also found specialty
brands struggled to gain visibility in-store and online over
the past year, due to fewer opportunities for sampling and impulse
purchases. Additionally, the specialty industry faces increased
competition from mainstream companies in the plantbased
market.
