estimated bakers can save big bucks over time with
the company's SoftStar CT and SofStar CTi when
considering the weight accuracy servos deliver.
" By accurately measuring the amount of travel from
the main ram, precisely adjusting the weight settings
and making sure that we reach the needed dividing
pressure, we reach an accuracy that is better than +/1
gram, which is the weight of a paper clip, " she said.
" With an assumed savings of 2 grams per bun and a
speed of 36,000 buns per hour, bakers can save more
than 150 lbs per hour. "
Controls also make it possible for dividers to adapt to
variances in the dough with minimal operator assistance.

the automation, the machine can automatically adjust itself

This requires sensors to monitor temperature and pressure
in the machine. As the dough changes, Mr. Mora
explained, the pressure will shift, and the machine will
adjust itself to maintain the set points. This can even vary
not from batch to batch but within the batch as well.
Consistent product from the divider, both in accuracy and quality,
results in consistent bakes and finished product.

" With large batches of dough, the dough may vary
within the batch over the time it runs, " Mr. McIsaac said.
" When you factor in intermittent shutdowns, the divider
becomes key to maintaining weight control and quality. "
Reiser's Vemag VPC 715 Process Check checkweigher
monitors the dough weights, records that data and uses
it to keep the divider on target.
Ms. Kennedy credits the control over the machine
movement with the adaptability to dough variability.
" Once we introduced this technology in our dividers,
we expected the dividers to be less sensitive for variations
in dough quality because the technology would
correct for that, and we were right, " she said.
When adjustments do need to be made, touch screens
make that simpler. WP Bakery Group's SoftStar CTi can
change amplitudes and speeds on the
drum round moulder during production.
Another side of protecting product
quality at the divider is reducing stress
on the dough. While this might not be
as important for some products, reducing
friction opens up the world of automation
to more sensitive doughs.
" When the dough is stressed during
dividing, the gluten structure will
be damaged, " Ms. Kennedy explained.
" With servo technology, we are able to
avoid this stress. "
With the data provided by the servo
controller, WP Bakery Group can minimize
pressure inside the divider, allowing
delicate doughs to go through the
process without losing finished product
quality.
There are also ways to build that
gentle processing into the divider. For
