an appealing sweet baked aroma. Layer cakes - particularly
yellow batter cakes - also rely on whole eggs to impact
the cake quality, from batter viscosity and aeration
to its rise, color, appearance and baked flavor and aroma.
Adding value with production claims
Specialty bakers are differentiating in the marketplace
by using egg ingredients with varied claims. The most
common are organic, grass fed, cage free and free range.
New York-based Feel Good Foods is rolling out glutenfree
buttermilk and wild berry pancake bites made with
cage-free eggs. These Danish-style pancake bites are sold
frozen and ready in minutes in the microwave.
Other production claims are gaining attention. One
Angel food cake is
an application that
benefits from egg
whites' leavening
functionality.
American Egg Board
example is " raised using regenerative agriculture practices. "
Proponents of
regenerative agriculture farming
practices claim to sequester earth-warming carbon from
the atmosphere and put it back into the soil where plants
thrive on it. It also improves crop yields, naturally reduces
pests and increases biodiversity.

Raising chickens with regenerative agriculture has
created a new premium category of eggs at retail and
has potential to do the same in baked goods. Eggs from
such sustainable farms may be touted as being better for
the planet.
Denver-based NestFresh Eggs is embracing the regenerative
agriculture movement. The company has added
more cover crops to attract worms and crickets for the
chickens to eat. Their waste then fertilizes the fields and
replenishes the soil with nutrients. NestFresh's family
of retail brands includes New Barn, which recently became
the first nationally distributed egg brand to launch
shell eggs certified by the Regenerative Organic Alliance,
the only national standard for regenerative organic
agriculture.
Another product claim soon available to bakers is animal-free
egg products. The cellular-grown ingredients
provide all the functionality of chicken eggs but without
the animal, making them attractive to the growing vegan
baked goods sector.
The Every Co., formerly Clara Foods, is a San Franciscobased
food technology business focused on accelerating
the transition to animal-free proteins. In October, it
launched the world's first animal-free, nature-equivalent
egg protein made using precision fermentation. This, the
company claims, requires a fraction of the earth's resources
compared to industrial animal agriculture.
The first ingredient replicates egg white protein. It is
highly soluble with a neutral sensory profile. In development
for seven years, the nearly tasteless protein can be
used to boost the protein level in snacks and nutrition bars.
Proteins created by The Every Co. will support label
claims, including kosher, halal and animal-free. It plans
to expand its range of animal-free proteins for use in
foodservice and consumer packaged goods applications.

Evolutionary evidence suggests that eggs came before
chickens, but chicken eggs did not. You can't have one
without the other. A chicken must lay a chicken egg. But
we are learning, you don't need a chicken to produce
egg protein.
