of time to prevent denaturing the delicate proteins with
foaming properties.
In addition to functioning as an emulsifier, yolks add
flavor and moisture to certain baked goods. They can aid
with batter viscosity, such as preparing donuts, and contribute
to the classic desirable golden yellow color some
baked goods demand.
