are focusing on pick-up and delivery options. Restaurants
such as Maggiano's have been working to create entire lines
of pre-made meals for consumers to take home and reheat
in their microwaves. Services that allowed these sorts of
meals to be delivered directly to consumers' homes are allowing
these lines to expand.
" Aided by the growth of third-party delivery apps -
Uber Eats, Door Dash, Grub Hub - the creation of ghost
kitchens and virtual concepts has given franchisees and restaurateurs
an opportunity to launch digital and mobile-first
brands with minimal investment, " Yianny Caparos said.
While these opportunities are thriving for foodservice
providers, it creates an expectation that bakers adapt to provide
products that can live up to wait times, delivery times
and the microwave.
" Many consumers really value the convenience of ordering
their favorite restaurant meals to their homes, but they
expect the same quality they enjoy when dining in, " Mr.
Mongeau said. " New product innovation is making this
easier for operators. "
For instance, a soggy burger or sandwich bun affects the
delivery experience.
At Weston Foods, investments in the artisan baking process
ensures that buns stand up to delivery conditions, Mr.
Mongeau said.
" We've helped our partners meet evolving consumer
demands - whether with innovation in burger buns or
helping with products and ideas, like meal kits, to help
them shift their business, " Mr. Mongeau said. " Our product
quality and artisan baked goods have really resonated
with our partners, aligning with the growing demand from
consumers for elevated experiences, both in restaurant and
at home. Because an elevated burger or sandwich needs an
elevated bun. "
Changes and challenges
Just as there was a drastic shift in operations at the beginning
of COVID-19, bakers must be ready to pivot once
again during this transition. At first, bakers were able to
compensate for the closure of foodservices with other channels
of business.
" In addition to servicing foodservice customers, we service
food manufacturing and retail customers across the
country, " Yianny Caparos said. " While the foodservice segment
took an initial hit with the pandemic, our retail and
food manufacturing segments thrived as consumers shifted
to eating at home. Our customer diversity across segments
and channels has helped Crown remain strong and wellbalanced
during the pandemic. "
Alpha Baking, too, used retail in both direct-store delivery
and frozen foods to offset the losses they saw over the
last year in foodservice.
