Fresh Rich, specifically to keep sweet goods fresher longer.
The enzyme solution creates a softer, more consistent and
more flexible crumb structure in sweet goods that contain
more than 20% sugar, such as muffins, pancakes and pound
cakes. The solution has a neutral taste and is label-friendly.
Biobake Fresh Rich can be used to formulate products that
are vegetarian, vegan, kosher and halal.
Enzymes may also assist with the rising costs of eggs,
something that chemically leavened baked goods manufacturers
have been experiencing during the past few years.
" Our clean label enzyme solutions allow producers of
chemically leavened baked goods, such as cakes and cake
donuts, to reduce their reliance on eggs without compromising
on quality or volume, " said Karim Houssenbhay,
research and development director, sweet goods, Puratos
USA. " Eggs can represent up to 30% of the total ingredient
cost for manufacturers. "
It's possible to reduce the quantity of eggs, whether
they're liquid, powdered whole egg or egg yolks, in a cake
recipe by 15% without sacrificing quality, he added.
" The functionality can be compensated by well-selected
and cutting-edge enzyme technologies, " Houssenbhay said.
" Some will help in gaining back the cohesiveness and resiliency,
while others can improve the freshness level of the crumb.
Sensory studies show that the new product will perform at
par with the original on taste, volume and color, and softness
can even be improved thanks to the action of the enzymes.
No other changes are needed in the production process. "
Beyond the immediate financial benefits, the adoption of
enzyme-based improvers contributes to a reduced environmental
footprint by lowering the carbon dioxide emissions
associated with egg production. This may become part of
the brand's marketing message.
" Moreover, the cost savings can empower formulators to
make ethical choices, such as transitioning from caged to
cage-free eggs, thereby aligning with broader sustainability
goals or state legislation, " Houssenbhay said.
Final considerations
Bakers need to be aware of how different enzymes can work
together either synergistically or antagonistically. Too much
or too little activity defeats the purpose of adding these ingredients.
