significantly increase shelf life without preservatives.
" We wouldn't have to throw away bread like we do
now, and it will increase the shelf life. It's a win-win for
everyone, " Mr. Kehrli said.

Packaging materials are improving in strength and durability, which allows bakers to reduce packaging thickness,
said Mark Finneran, US sales representative, Niverplast.
" That can add up to significant savings in material usage, " he said.
Some of the most common green materials include
paper and laminated paper products, thinner gage laminated films, compostable films and monolayer films.
Several snack brands are experimenting with monomaterials, which can be more easily recycled, Mr. Mitra
said. While these new materials do help the environment, the cost can be much higher than traditional films.
" There are more and more sustainable materials,
biodegradable materials, plant-based materials that are
improving significantly in terms of the barrier that they
offer, " Mr. Izquierdo said. " However, the price increases
significantly, so you need to be ready to pay for it. "
Higher demand is also making sustainable materials
harder to find, especially for a high-volume business.
" Options available in green packaging for oxygen and
moisture protection are limited versus standard films, "
Mr. Finneran said.

Another problem for sustainable packaging is the nation's recycling system. The United States has a patchwork of thousands of recycling programs across the
country, each with its own rules, which creates challenges for companies distributing goods nationwide and
globally. And it also creates confusion among consumers
who want to recycle but aren't clear about what they can
put in their recycling bins.
" Right now we really don't have a functional, effective,
efficient recycling system, " Meghan Stasz, vice president
of packaging and sustainability, CBA, said in a recent
episode of Baking & Snack's podcast Since Sliced Bread.
Companies have stepped up to try to do their part.
" All of the largest consumer packaged goods companies have made some sort of public commitment to
making their packaging better in some way for the environment, " Ms. Stasz said.
One recycling program is Bedford's TagBack, which
allows consumers to return Bedford ties, tags and clips
to dropboxes or mail them to Bedford, and then they're
upcycled into usable products, Ms. Larson said.
Business and government must come together to
communicate the needs of everyone in the recycling
chain, find solutions and educate the public.
" We as consumers have to get way better at recycling, "
said Dennis Gunnell, president, Formost Fuji Corp.

Adapting the machinery to green
When bakeries adopt more environmentally friendly
packaging, adjustments will most likely need to be made
to equipment as green materials often do not perform
the same on equipment as traditional ones.
" There can be setbacks when trying to get new films
to seal properly, " said Angela McDaniel, marketing coordinator, Formost Fuji Corp. " The machine may need
to be adjusted; the temperature and speed might change
with a different material. "
Bakery packaging equipment is generally designed
for high-speed production using plastic bags and films,
which is forgiving on the settings and tolerance on bag
opening mechanisms, said Alain Lemieux, product
group leader, AMF wrap room, AMF Bakery Systems.
