Inclusions for flexibility
Sometimes enhanced or fabricated inclusions make more sense
in baked goods, especially when extended shelf life and cost are
key product attributes. Such bits and pieces may be 100% real
fruit. They also may be produced using either a carbohydrate
or lipid base and can be designed to work with varied product
claims, including natural, contains real fruit and allergen free.
" We sell prune bits, which are made from dicing a paste
made of prunes, " Ms. Leahy said. " Nothing else is added. Prune
bits are free-flowing, low in water content, and easy to use and
store. The benefits of using prune bits over diced prunes or
other diced dried fruit is uniformity. Each piece of fruit in the
muffin or loaf of bread will be the same size and texture. "

Bits made of fruit paste will typically soften when hydrated
with water, turning into a puree that may be added invisibly
into baked goods. In this format, the ingredient may assist with
extending product shelf by improving moisture retention and
reducing oxidation. Research shows that as little as 1% fresh
plum concentrate added to the total formulation can curb rancidity from other ingredients in a range of baked goods. This
may be useful in products containing whole grains, sprouted
grains and nuts.
Tree Top specializes in using highly versatile and economical apples to make customized dried fruit inclusions. The neutral color and flavor of apples, along with firm texture, makes
them a great base for delivering other fruits.
" An apple granule that is colored and flavored like strawberry may be added topically to a bar to provide visible fruit pieces
that are stable, " Ms. Alfaro said.
The company's fruit flake powders are made from fruit purées in single fruit varieties and combinations. They can be
added to doughs, cake mixes and fillings.
Fabricated inclusions, or nuggets, may be produced using
clean label technology and manipulated for performance.
" Nuggets may be designed to melt in the dough during
the baking process, creating different inclusion texture, " said
Marjorie Easley, bakery pastry chef at Kerry. " Nuggets used to
replace fruits and nuts have long shelf lives when stored in ambient conditions and can be manufactured in a variety of sizes
to accommodate different dough processes like sheeting. "
Nuggets enable bakers to include the texture and flavor of
fruits and nuts without the challenges of these ingredients.
