The biggest risk doesn't necessarily come from the OEM,
argued Jim Kline, president, The ENSOL Group. Thirdparty crews, like millwrights and electricians, can bring the
greatest challenge, especially if a bakery doesn't have employees capable of doing the installation themselves.
" The remoteness of the supplier isn't the most difficult part; the difficult part is physically getting the
work done, " Mr. Kline explained. " And there's no good
solution to this. You have to have an established relationship with the third party providing the services so you
can rely on them to have done their own safeguarding
against the virus. "
If an installation is absolutely necessary, it's going to
require a lot of planning up front and some standard
best practices.

Plan, plan and then plan more
Never before has preparation become more critical to
successful installations. While Mr. Brixey said even in
the best of times bakers should have a Plan A, B and C,
it's often non-negotiable with today's challenges.
" People make too many assumptions that it will go
smoothly, and they have no Plan B strategy to consider, "
he said. " You need a Plan B and probably a Plan C. You
need to know the steps needed to execute perfectly, and
it never is executed perfectly, and it's even worse if the
expert isn't in the room. Communication and preparation are so important, and everything falls under that. "

needs are going to be, " said John Macy, president of the
Elmwood, N.J.-based snack manufacturer. " If Plan A
doesn't work out on your schedule, then you need a Plan
B. This isn't new, but the consequences of not having a
Plan B are more severe now. "
Bakers and OEMs need to be in constant communication before the project, and Mr. Brixey suggested setting
up ground rules for how and who will spearhead communication on both sides and even making these conference calls mandatory.
" Everyone has the ability to communicate with suppliers, but are they? " he asked. " Is there a focus on communication, and what are we discussing in these meetings? You can have all those mechanisms in front of you,
but you have to use them. "
If bakery employees will be doing the install themselves, training becomes critical. At the very least, bakery operators need to be communicating with supplier
representatives who have done this before. Ideally, bakers can send one operator or a member of the maintenance team to the OEM's technical center to train on the
