" The solutions could require a
larger cooling system or larger storage
tanks, larger pumps and tubing, and
increasing or adding onto the piping
cleaning system, " he said.
With minor or micro ingredients,
Ms. Arato said, proper planning and
installing a modular system allows
bakers to substitute or add on materials more easily. Various container
systems often lend themselves to lowcost and easy expansion.
Mr. Stricker pointed out that batch
frequency and recipe requirements
provide a starting point when boosting demand on an automated minor
and micro ingredient system.
" In some cases, you may be able to
increase the number of batches with
little or no change, " he said. " However,
if you are exceeding the system's ability
to accurately deliver the minor ingredient batches, you may need to add
additional equipment to reduce the
workload. Another thing to consider
is how often operators may have to refill minor ingredient bins. If the ingredient usage has increased significantly,
this may be time to consider switching
from 50-lb bags to supersacks. "
Before deciding on how to best bolster capacity, Ms. Arato said, compare
the price for upgrading the equipment
to the cost of buying new because the
result may be surprising.
" There are many cases where 'new'
is cheaper, " she said. " Get an evaluation early as some equipment may not
be able to be upgraded. On a system
that is 10 or 15 years old, find out what
improvements or upgrades are needed
to make sure that the system meets the
latest safety standards. "
Mr. Goshert recommended that
bakers fully evaluate both the necessary capacity and the rate of the ingredient batching system, as well.
Before enhancing ingredient handling, consider a universe of shortand long-term options to avoid
making a decision that will create additional problems and cost even more
money in the future.
