Consumers in search of probiotics to address a
specific health problem should identify the particular strain proven effective in treating that condition.
Unfortunately, the US Food and Drug Administration
does not require companies to identify probiotics by
strain. However, as consumers become more educated,
food marketers are finding it beneficial to identify the
probiotic strain and CFU count.
When simply seeking out products to assist with improving overall health and wellness, shoppers may be
perfectly content with the phrase "contains probiotics"
on a package label. No reference to genera, species and
strain is necessary. After all, numerous meta-analyses
conclude, with some cautions, that probiotics as a class
are beneficial. This suggests many probiotic strains share
the same positive effects.

health is growing, but there are still a number of common myths surrounding best-formulation practices,"
Mr. Cox said. "One frequent misconception is that all
probiotic strains are the same. Each strain possesses its
own distinct characteristics, and these properties may
influence safety, efficacy and their suitability for certain

Cleveland-based Orlando Baking Co. pioneered probiotic bread in the US when the company introduced True
Grains Seed'licious in 2011 after two years of product
development. Since then, the company partnered with
the Cleveland Clinic to reformulate the bread and offer
additional whole grain benefits. This 100% whole wheat
bread is made with probiotic cultures to promote digestive health and features flax, sunflower and chia seeds and
millet for a "good source of omega 3 fatty acids" claim.
"As we see it, the True Grains probiotic line positions sliced bread back on top as the greatest thing
ever," said Nick Orlando, vice-president of sales at the
family-owned bakery. "Our probiotic breads will appeal
to consumers who may suffer from digestive health issues and are interested in the benefits of maintaining a
healthy belly."
Little Duck Organics Inc., New York, developed a line
of gluten-free fig bars designed for kids, the company's
target consumer. The fillings are made with organic
fruits and vegetables and are enhanced with probiotics
and flaxseed, the latter being a natural source of omega
3 fatty acids.
Also intended for young consumers, Freed Foods LLC,
Austin, TX, now offers Nurturme Organic Ancient
Grain Cookies with Probiotics. The gluten-free treats
come in cocoa and lemon honey flavors. The company
said that seven cookies deliver a complete daily serving
of probiotics to support good digestive health.
Packaged Facts expects to see an expansion of probiotics in breads and other baked goods as formulators
become more familiar with their inclusion, according
to Mr. Sprinkle.
