"In new plants where capital cost of steam boilers, piping, and infrastructure is required, heat recovery provides a near immediate payback - ROI typically under 12 months with a several million-dollar system," Mr. Houtz said. "That's a no brainer." Mike Anderson, AMT's sales manager, suggested assigning a dollar number to carbon emissions. "If you're capturing 1,000 tons of emissions a year at $50 a ton, that's $50,000 in credit toward heat recovery and reducing carbon footprints," he said. To save energy, Reading Bakery Systems (RBS) offers air-to-air exchangers that preheat the combustion air reintroduced into the oven. "We also use lighter-weight oven belts to help reduce fuel usage," said Tremaine Hartranft, RBS director of engineering. "The oven belt absorbs a significant amount of heat during the baking process as it cycles through the oven." With oven burners, colors paint a story about emissions. In 2017, Flynn Burner's InfraRed-Ribbon Hybrid Burner received an American Society of Baking Innovations Award for ecodesign and sustainable technologies. The hybrid burner combines the standard blue flame burner with the low nitrogen oxide (NOx) properties of the infrared (IR) burner. Bakers can run blue, IR or both flames at the same time. "By combining the properties of these two types of flame, we maintain the traditional blue flame, reduce the NOx and reduce the gas consumption," said Simon Walker, vice-president of Flynn Burner. "Ultimately, we will be able to switch between blue flame and infrared from a recipe on the HMI screen and be able to customize an oven on-the-fly to suit the product." Flynn can fit their hybrid burners on new or existing ovens. Mr. Walker pointed out that IR burners alone cannot bake everything effectively as the heat will penetrate the product more than normal heat energy. As a result, IR appears better suited for cracker and similar snack type products, though Flynn is gathering data for baking breads and rolls. Flynn also offers EcoZone, which automatically adjusts the blue flame burner's air-to-gas ratio to reduce NOx and increase efficiency.
