F From the litany of educational opportunities to the keynote speakers to the networking, the American Society of Baking (ASB) came through with its promise to focus on the sustainability of the people of the industry. Bill Zimmerman, president, Pacific Northwest Baking, Sumner, WA, and 2018 ASB chairman, along with Theresa Cogswell, 2018 program chair, put some of the industry's biggest challenges in the spotlight at this year's event, held Feb. 26-28 at the Hilton Chicago. Genevieve Martin, executive director, Dave's Killer Bread Foundation, Milwaukie, OR, and Jeff Anderson, vice-president of purchasing and operations for Chicago-based Eli's Cheesecake Co., shared their best practices in hiring non-traditional workers. Mario Somoza, president and CEO, Pan Pepin, Bayamon, Puerto Rico, shared his company's story of resilience after being slammed by Hurricanes Irma and Maria in 2017. Three CEOs participated in a panel discussion about the importance of company culture. They included Cordia Harrington, The Bakery Cos., Nashville, TN; Allen Shiver, Flowers Foods, Thomasville, GA.; and Josh Skow, Canyon Bakehouse, Loveland, CO. The final keynote speaker, Chris Grollnek, a domestic terrorism expert, discussed active shooter prevention, emphasizing that baking companies, just like any other establishment, must reorient their thinking of what to do in the case of an emergency. ASB's MarketPlace table top exhibits featured 110 companies showcasing equipment, ingredients, staffing services, software and more. On the meeting's final day, Mr. Zimmerman passed the gavel on to incoming chairman Paul Rainey, director of manufacturing support and integration, Flowers Foods. Trent Wanamaker, sales director, bakery and confectionary, DuPont, was named ASB's 2019 program chair.
